This March, with the Romanesque Route, we returned to medieval times. Therefore, we propose a recipe from these times. Delicious and easy to prepare.

W Hippocras (ipocras or Ypocras) was a very common drink in the Middle Ages, served in most banquets, at the end of the meal, because it was believed to have digestive properties.

Ingredients:

• 1 liter of red wineYpocras
• 2 cups of honey
• 1 tablespoon of (grated or powdered):

Cinnamon

Cardamom

Ginger

White pepper

Nutmeg

Cloves

Anise

Preparation:

Boil the wine with the honey. Remove from heat and take out the foam. Add the spices. Leave it to rest for 24 hours.

During this time, will be formed a dense layer of spices and honey in the pot bottom, which must not be mixed with the wine.
When you bottle it, you must pass the wine through a sieve and several layers of cloth or by a coffee filter, so as to retain all the debris of the spices.
The Hippocras should be prepared with at least 1 month in advance. The longer to mature, the tastier it is.
