The chestnuts have an outstanding versatility and can be used in many types of cooking recipes. My Own Portugal could not miss the opportunity to make a special meal for these autumn days so we chose to do a pork loin with chestnuts. Let us taste this fruit of the “bread tree”.

 

Ingredients:

  • 1kg of Pork Loin
  • 200g of shelled Chestnuts
  • 500g Potatoes sliced in quarters
  • 2 large Carrots cut into thick slices
  • 2 Onions sliced in rings
  • Olive Oil.
  • Salt.
  • Lard.
  • Pepper.
  • 5 crushed Garlic cloves
  • White wine.

 

Preparation:

Start by rubbing the pork loin with lard, pepper, salt, olive oil and crushed garlic cloves and let it rest overnight (minimum 6 hours).

Now we are ready to go on. Preheat the oven to 180 ° C.

On a tray cover the bottom with the onion rings. On top place the pork loin and place the potatoes, the onions and the chestnuts around it. Drizzle everything with olive oil and with white wine and cover the tray with tin foil avoid the meat to dry out.

Place the tray in the oven and let it cook for one hour and a half.

At the end you'll have a rich and tasty dish slightly sweet by the chestnuts. If you want you can serve with white rice and a good Douro wine.
