Flavours from Fundão – Roasted Lamb in a Wood Oven

Ingredients:
• 1 Lamb with 6kg
• 2 Garlic bulb
• Onions
• 5 Cloves
• Bay leaves
• Salt
• Paprika
• Parley
• 1l of White Wine
• Olive Oil
• Pieces of bacon.

How to do it:
On the night before prepare a mash with crushed garlic, salt and paprika and spread it – on top of the lamb. Let it take the seasoning. The next day, fill the bottom of a clay tray with sliced onions and place the lamb on top of it. Pour the whine and add the rest of the ingredients. Place bacon slices on top of the lamb and put the tray in the oven, preferably in a wood-burning oven. Should be accompanied with roasted potatoes in quarters.
